Les recherches d'Erez utilisent des méthodes quantitatives, qualitatives et expérimentales pour étudier comment les gens produisent et perçoivent des modèles de variation du langage socialement significatifs. Il s'intéresse particulièrement à la manière dont la variation signale l'appartenance à un groupe et à la relation entre le langage et les structures plus larges de l'inégalité sociale, notamment celles liées au genre, à la sexualité, à la classe sociale et à la nation. Erez a mené des recherches sur ces sujets et d'autres en Israël/Palestine, aux États-Unis, au Royaume-Uni, au Brésil et en Afrique du Sud. Depuis 2017, Erez est chercheur principal du projet Accent Bias in Britain, à la tête d'une équipe interdisciplinaire qui examine comment les attitudes liées à l'accent peuvent entraver la mobilité sociale au Royaume-Uni.
